Raw recipes can be more complex than a basic salad of greens but just as easy as picking plants from the garden.

It is now summertime and gardens are full of rich, ripe veggies ready for picking. This time of year is perfect for raw vegans or someone who wants to test the waters of raw foodism in that all the ingredients needed for healthy meals can be available in the back garden.

Here are three simple and quick recipes that only require a blender, a decent knife, and basic serving bowls or cups. All three are rich in nutrients and flavor, perfect for a light, simple lunch or dinner. Each of these recipes are also great for mixing up the ingredients for whatever is available in individual gardens. All three serve two people.

Easy Energy Soup

This recipe is inspired by Angela Stokes-Monarch of the Raw Food World TV Show.

Ingredients:

  • 1 medium to large zucchini, chunked
  • 1 bunch greens (kale, spinach, arugula, or other)
  • ¼-1/2 cup of cilantro, basil, chives and thyme, mixed
  • 1 avocado, pitted
  • 1 lemon, juiced
  • ½ tsp of salt (Himalayan, Sea, Celtic Sea, or Black)
  • Coarsely chopped greens and herbs

Directions:

  1. Add all ingredients into a high speed blender.
  2. Blend thoroughly and pour into bowls.
  3. Sprinkle diced chives and thyme on top and serve.

Blended Green Juice

Many people interested in the raw diet also have an interest in juice fasting. Here is a recipe anyone interested can make, even if they don’t have a juicer. This recipe can be enjoyed by anyone on a juice fast or as a quick and simple lunch on the go.

Ingredients:

  • 1 medium to large red or yellow apple
  • 3-4 medium to large sticks of celery
  • ½ bunch of dark greens (spinach, kale, or other)
  • ½ lemon
  • 2 cups of water
  • Chop the celery and apple into chunks.

Directions:

  1. Coarsely chop the greens.
  2. Peel the lemon half.
  3. Add everything to a high speed blender and blend until liquid.
  4. Pour into and strain through a nut milk bag or cheese cloth.
  5. Pour into glasses and serve.

Bloody Mary Mix Soup

No, there’s no vodka in this soup, just the intoxicating blend of tomatoes and herbs from the garden.

Ingredients:

  • 2 medium tomatoes
  • 2 large stalks of celery
  • 1 medium red bell pepper
  • 1-2 garlic cloves
  • 1 tsp of cracked black pepper
  • ½ tsp of salt (Sea, Celtic Sea or Black)

Directions:

  1. Chop the tomatoes, celery and red pepper into chunks and add all the ingredients to a high speed blender.
  2. Blend until smooth.
  3. Pour into bowls or tropical cocktail glasses, enjoy with a celery stick or a dash or noma shoyu.
